I’m going to kick-off National Irritate a Food Pic Hater Food Pic Posting Week, NIAFPHFPPW for short, with a recipe filled with a shit-load of pics. You’re welcome.
This is my own empanada recipe that came about after making traditional empanadas several times and thinking “Damn, this should be way easier and involve more cheese.” And yes, sometimes I do throw in crispy bacon. As a matter of fact, throw in anything your heart desires. I just find these very tasty and simple.
Cheesy Turkey Empanadas
Shit You’ll Need:
Ground Turkey (or Ground Beef, if you want)
1/2 Onion, finely chopped
3-4 Jalapenos, seeded, de-veined and finely chopped (use less or more according to your taste)
1/2 8 oz. Pkg. Cream Cheese
2 cups grated Cheddar Cheese
Salt and Pepper and Garlic Powder- to taste (not pictured)
Goya Discos Empanada Pastry (They have grande ones and regular size ones. You can find them in the Latin frozen food section.)
Do What I Tell You To Do:
Brown the turkey in a skillet with the chopped onion and chopped jalapenos. Add salt and pepper, garlic powder and cumin to your taste. Chop and mix it as it cooks.
After the turkey browns, turn the heat off, drain any fat, put the meat back in the skillet and add the cream cheese and 1 cup of cheddar cheese. Stir until melted and blended.
Then take a spoon and load up a disco with a few spoonfuls of meat mixture and add some of the remaining cheese on top.
Fold and seal with a fork. I cut a little X on top because I bake these and it lets out some of the steam. If you’re gonna deep fry, don’t vent yours. Also, if you don’t feel like using up all your mixture, it stores nicely in the fridge for the next day or two.
Because I bake and don’t fry, I egg wash mine, which is just a beaten egg mixture with a few drops of water.
Bake those bitches for about 15-20 minutes in a 350 degree pre-heated oven. Just keep on eye on them. If deep frying- you’re on your own. After they’ve browned to your liking, pull them out of the oven and start shoving ‘em in your pie-hole, maybe with some sour cream on the side to dip them in.
P.S. Don’t forget to enter Yabu’s Food Pic Contest this week for a chance to win an original piece of stained glass!42 Comments

DA-yum, that looks easy that even my lazy ass can do it . . .
It really is AND you can eat on them for days or freeze them for later.
Damn, those sound and look good. I’ll be giving ‘em a try. Also, fuck a bunch of Meet and Greet, we need to all get together and have a Meet and Eat.
The new house SCREAMS for a meet and eat.
Put me and the Juju Woman down. We’ll take a couch, or we can make a nest on the floor. Seriously, I’ve met some really nice folks doing this internet thing. Traveled to many cities with them, and also Central America. Having said that, I’ve also met some weird internet motherfuckers, face to face. I’m talking “breaking for cover weird”.
Oh hell. I fear there’s a lot of them out there so I will be select, oh, and armed all weekend. HAHA!
Deal, and so will I. Maybe our paths will cross, maybe not. Make no mistake, there are some crazies out there, but you already know that. Hell, there are crazy people everywhere.
I’m thinking a pool party. People can swim and play with my baby goat. Then later we can ride out and shoot hobos. Fucking hobos.
I’ll bring an extra box or two of bullets, and my tracking dog.
Thank you so much for the pix. It made it so freckin easy. I love this. I had ground pork in the freezer so I used that and it turned out pretty good. I cant wait to try the Turkey. I am taking these to church with me this A.M. for the kids to snack on. These are great finger food. Thanks!!!!
You’re welcome. The smaller discos would probably be best as snackers. The large ones are pretty big.
I had no idea there was such a thing as ready made empanada dough. Woot!
And yours are so much prettier than the ones I have made. So uniform and neat. Mine always look raggedy around the edges. I shall have to try this recipe!
YES! And the possibilities are endless…breakfast empanadas stuffed with sausage, egg and cheese…chicken and cheese ones…. anything you like.
I gotta get in on this.
Is the glass stained with the blood of a Food Pic Hater?
Does a picture of Doritos count?
HA! The pic can be anything you eat. You can enter as many times as you want too. Let Yabu know when you post and he’ll hook you up with entries.
That’s fantabulosity for the tastebuds right there!! I miss making them, and now that Goya has the empanada stuff, it will be easier to make. Making them from scratch takes forfuckingever.
Oh I would probably never make them if I have to make the wrapper thingie.
wow… I just might have to try that with Sean’s Pulled Pork! I sent you and Yabu pics, crappy pics… But it is tasty (Jack Daniels wood chips) SMOKY GOODNESS!!!
YES! Stuff ‘em with pork and BBQ goodness!
His smoked pulled pork is so good it truly doesn’t NEED anything else on it!
I’m gonna have to try to do a shoulder. I dutch oven pork rump roasts for pulled pork and sometimes I just don’t like the texture of some of the meat.
Mmmmmm, sour cream, guacamole, and some salsa on the side. The dinosaurs will come knocking on my door demanding their share for sure! Bwahahahaha! I’ll have my own dinosaur zoo at last!
(It’s Sunday morning, I don’t have to make sense.)
EVERYONE needs a dinosaur zoo. Until it’s cooking time that is.
Laura, I’m working my way through a Greek cookbook called The Olive and The Caper. I’m at the section with the recipes for Grilled Marinated Goat and Roasted Goat. I’m assuming you don’t want me to post those pics and recipes?
I CAN’T HEAR YOU *LALALALALALALALALA*
Seriously, we owned a beef farm, I know people eat animals. I eat animals. I just could not eat a goat. There are too many other delicious animals out there for that. I would feel like I was eating a companion animal. Totally serious.
Never get too friendly with any animal. It’s too hard to eat them or their cousins afterward.
When I was petting the calves and playing tag with the ones being bottle fed in the barn my mom would walk by and say “Stop playing with your food, Laura.” My mom was so cool.
Your mom sounds very cool. The empanadas look delicious and your instructions are superb.
4H kids learn early where food comes from. : )
Wow good for you! Looks yummy. I *do* hate food pics though. I kinda hate food. Making it at least. Ugh.
Hate food?? Oh, cooking it. There’s always delivery.
Those look pretty damn good! I didn’t know you could buy pre-made empanada skins. I’ll have to take a look next time I’m at the store. I looove empanadas, they’re just a pain in the ass to make(well the ones I make, since I use a shit-ton of ingredients).
Yeah, that’s why I had to come up with something easier and tasty. Most grocery stores ahve the discos in the ethnic or Latin foods section.
You have some massively impressive chopping skills! Great job on the peppers and onions.
Thank you. And I have some mighty sharp knives.
I appreciate your S&M-ish style of recipe writing
HA! I’m like a 40 Shades of Grey cook.
They look yum! I really like food pics, especially the ones with the as you go steps in them. More please! Haters gonna hate- that’s their issue!
I’ve got my second offering up and ready to go! Nothin’ fancy, though.
YUMMY I so want some of these. Sadly I don’t think Oregon has that type of dough. I wonder Laura what else could we use. Next time I will look for it. Would it be in the freezer isle???? Help…………..
Pie crust. The kind that’s rolled up a box, usually by the biscuits in the grocery store. It’d work.
