I’m going to kick-off National Irritate a Food Pic Hater Food Pic Posting Week, NIAFPHFPPW for short, with a recipe filled with a shit-load of pics. You’re welcome.
This is my own empanada recipe that came about after making traditional empanadas several times and thinking “Damn, this should be way easier and involve more cheese.” And yes, sometimes I do throw in crispy bacon. As a matter of fact, throw in anything your heart desires. I just find these very tasty and simple.
Cheesy Turkey Empanadas
Shit You’ll Need:
Ground Turkey (or Ground Beef, if you want)
1/2 Onion, finely chopped
3-4 Jalapenos, seeded, de-veined and finely chopped (use less or more according to your taste)
1/2 8 oz. Pkg. Cream Cheese
2 cups grated Cheddar Cheese
Cumin
Salt and Pepper and Garlic Powder- to taste (not pictured)
Goya Discos Empanada Pastry (They have grande ones and regular size ones. You can find them in the Latin frozen food section.)
Do What I Tell You To Do:
Brown the turkey in a skillet with the chopped onion and chopped jalapenos. Add salt and pepper, garlic powder and cumin to your taste. Chop and mix it as it cooks.
After the turkey browns, turn the heat off, drain any fat, put the meat back in the skillet and add the cream cheese and 1 cup of cheddar cheese. Stir until melted and blended.
Then take a spoon and load up a disco with a few spoonfuls of meat mixture and add some of the remaining cheese on top.
Fold and seal with a fork. I cut a little X on top because I bake these and it lets out some of the steam. If you’re gonna deep fry, don’t vent yours. Also, if you don’t feel like using up all your mixture, it stores nicely in the fridge for the next day or two.
Because I bake and don’t fry, I egg wash mine, which is just a beaten egg mixture with a few drops of water.
Bake those bitches for about 15-20 minutes in a 350 degree pre-heated oven. Just keep on eye on them. If deep frying- you’re on your own. After they’ve browned to your liking, pull them out of the oven and start shoving ‘em in your pie-hole, maybe with some sour cream on the side to dip them in.

You’re welcome. The smaller discos would probably be best as snackers. The large ones are pretty big.

I’m gonna have to try to do a shoulder. I dutch oven pork rump roasts for pulled pork and sometimes I just don’t like the texture of some of the meat.

Seriously, we owned a beef farm, I know people eat animals. I eat animals. I just could not eat a goat. There are too many other delicious animals out there for that. I would feel like I was eating a companion animal. Totally serious.
Never get too friendly with any animal. It’s too hard to eat them or their cousins afterward.
When I was petting the calves and playing tag with the ones being bottle fed in the barn my mom would walk by and say “Stop playing with your food, Laura.” My mom was so cool.

Those look pretty damn good! I didn’t know you could buy pre-made empanada skins. I’ll have to take a look next time I’m at the store. I looove empanadas, they’re just a pain in the ass to make(well the ones I make, since I use a shit-ton of ingredients).
Yeah, that’s why I had to come up with something easier and tasty.Most grocery stores ahve the discos in the ethnic or Latin foods section.

Pie crust. The kind that’s rolled up a box, usually by the biscuits in the grocery store. It’d work.
