I’m going to kick-off National Irritate a Food Pic Hater Food Pic Posting Week, NIAFPHFPPW for short, with a recipe filled with a shit-load of pics. You’re welcome. | Fetch My Flying Monkeys
Everyone needs a fleet of flying monkeys to rip the stuffing out of the annoying people in their lives
— Laura

This is my own empanada recipe that came about after making traditional empanadas several times and thinking “Damn, this should be way easier and involve more cheese.” And yes, sometimes I do throw in crispy bacon. As a matter of fact, throw in anything your heart desires. I just find these very tasty and simple.

Cheesy Turkey Empanadas

Shit You’ll Need:

Ground Turkey (or Ground Beef, if you want)
1/2 Onion, finely chopped
3-4 Jalapenos, seeded, de-veined and finely chopped (use less or more according to your taste)
1/2 8 oz. Pkg. Cream Cheese
2 cups grated Cheddar Cheese
Cumin
Salt and Pepper and Garlic Powder- to taste (not pictured)
Goya Discos Empanada Pastry (They have grande ones and regular size ones. You can find them in the Latin frozen food section.)

Do What I Tell You To Do:

Brown the turkey in a skillet with the chopped onion and chopped jalapenos. Add salt and pepper, garlic powder and cumin to your taste. Chop and mix it as it cooks.

After the turkey browns, turn the heat off, drain any fat, put the meat back in the skillet and add the cream cheese and 1 cup of cheddar cheese. Stir until melted and blended.

Then take a spoon and load up a disco with a few spoonfuls of meat mixture and  add some of the remaining cheese on top.

Fold and seal with a fork. I cut a little X on top because I bake these and it lets out some of the steam. If you’re gonna deep fry, don’t vent yours. Also, if you don’t feel like using up all your mixture, it stores nicely in the fridge for the next day or two.

Because I bake and don’t fry, I egg wash mine, which is just a beaten egg mixture with a few drops of water.

Bake those bitches for about 15-20 minutes in a 350 degree pre-heated oven. Just keep on eye on them. If deep frying- you’re on your own. After they’ve browned to your liking, pull them out of the oven and start shoving ‘em in your pie-hole, maybe with some sour cream on the side to dip them in.

You can't cook an empanada around here without a damn Parasaurolophus showing up.

Bon appétit!

P.S. Don’t forget to enter Yabu’s Food Pic Contest this week for a chance to win an original piece of stained glass!

  1. DA-yum, that looks easy that even my lazy ass can do it . . .

  2. Yabu says:

Damn, those sound and look good. I’ll be giving ‘em a try. Also, fuck a bunch of Meet and Greet, we need to all get together and have a Meet and Eat.

    • Laura says:

The new house SCREAMS for a meet and eat.

      • Yabu says:

Put me and the Juju Woman down. We’ll take a couch, or we can make a nest on the floor. Seriously, I’ve met some really nice folks doing this internet thing. Traveled to many cities with them, and also Central America. Having said that, I’ve also met some weird internet motherfuckers, face to face. I’m talking “breaking for cover weird”.

  3. Hiley says:

Thank you so much for the pix. It made it so freckin easy. I love this. I had ground pork in the freezer so I used that and it turned out pretty good. I cant wait to try the Turkey. I am taking these to church with me this A.M. for the kids to snack on. These are great finger food. Thanks!!!!

  4. Nicole says:

I had no idea there was such a thing as ready made empanada dough. Woot!

And yours are so much prettier than the ones I have made. So uniform and neat. Mine always look raggedy around the edges. I shall have to try this recipe!

  5. MSgt B says:

I gotta get in on this.

Is the glass stained with the blood of a Food Pic Hater?

Does a picture of Doritos count?

  6. That’s fantabulosity for the tastebuds right there!! I miss making them, and now that Goya has the empanada stuff, it will be easier to make. Making them from scratch takes forfuckingever.

  7. Jena says:

wow… I just might have to try that with Sean’s Pulled Pork! I sent you and Yabu pics, crappy pics… But it is tasty (Jack Daniels wood chips) SMOKY GOODNESS!!!

  8. Dobermom says:

Mmmmmm, sour cream, guacamole, and some salsa on the side. The dinosaurs will come knocking on my door demanding their share for sure! Bwahahahaha! I’ll have my own dinosaur zoo at last!

(It’s Sunday morning, I don’t have to make sense.)

  9. Cheryl Lundgren says:

Laura, I’m working my way through a Greek cookbook called The Olive and The Caper. I’m at the section with the recipes for Grilled Marinated Goat and Roasted Goat. I’m assuming you don’t want me to post those pics and recipes?

    • Laura says:

      I CAN’T HEAR YOU *LALALALALALALALALA*

Seriously, we owned a beef farm, I know people eat animals. I eat animals. I just could not eat a goat. There are too many other delicious animals out there for that. I would feel like I was eating a companion animal. Totally serious.

      • Cheryl Lundgren says:

Never get too friendly with any animal. It’s too hard to eat them or their cousins afterward.

        • Laura says:

When I was petting the calves and playing tag with the ones being bottle fed in the barn my mom would walk by and say “Stop playing with your food, Laura.” My mom was so cool.

          • Cheryl Lundgren says:

Your mom sounds very cool. The empanadas look delicious and your instructions are superb.

4H kids learn early where food comes from. : )

  10. Wow good for you! Looks yummy. I *do* hate food pics though. I kinda hate food. Making it at least. Ugh.

  11. xul says:

Those look pretty damn good! I didn’t know you could buy pre-made empanada skins. I’ll have to take a look next time I’m at the store. I looove empanadas, they’re just a pain in the ass to make(well the ones I make, since I use a shit-ton of ingredients).

  12. untbunny says:

You have some massively impressive chopping skills! Great job on the peppers and onions.

  13. lynn says:

I appreciate your S&M-ish style of recipe writing :-)

  14. QueenBee says:

They look yum! I really like food pics, especially the ones with the as you go steps in them. More please! Haters gonna hate- that’s their issue!

  15. xul says:

I’ve got my second offering up and ready to go! Nothin’ fancy, though.

    http://xulsdarklight.blogspot.com/2012/09/niafphfppw-offering-second.html

  16. Trish says:

YUMMY I so want some of these. Sadly I don’t think Oregon has that type of dough. I wonder Laura what else could we use. Next time I will look for it. Would it be in the freezer isle???? Help…………..
