My friend gave me this recipe a few months ago and I have made it a couple times. It’s delicious. It makes a ton and can feed a small army and reheats nicely. The first time I made it I was at the grocery store without a list and bought tater tots instead of hash browns. It turned out excellent using the tots. I’m like a scientist who stumbled blindly into discovering a cure for some disease or something. I really should win the Nobel with my tater tot discovery, but you can try it with either.    

Chicken Hash Brown Casserole

2 lb. bag of hash browns- thawed
1/2 cup chopped finely onion
16 oz. sour cream
1 can of Cream of Chicken Soup
16 oz. sharp cheddar cheese
2 cups corn flakes
1/2 cup melted butter (NOT margarine)
1/4 tsp. salt and pepper
chicken tenders (or any boneless-skinless chicken)

Mix all ingredients together in a very large bowl minus 1/2 cup of corn flakes and chicken. Scoop into baking dish, top with chicken and then Corn Flakes. Bake at 350 degrees for 1 hour, or until done.

*I have modified this recipe by using 2 lbs of thawed tater tots (makes it crunchier), extra cheese (makes it cheesier), and I use boneless, skinless chicken breasts that I pound to even thickness (cooks evenly) then I bury into the tot mixture instead of setting on top (makes it more tender.) Then I top it all with French’s Fried Onions instead of corn flakes because it needs more fat and calories. It’s Christmas dammit!

    It’s like we share a brain when it comes to fat and sugar. So, in honor of that, I will be making this tonight. I shall give you a full report at my blog :D

    As I started reading the recipe my ankles began to swell…then I keeled over before I could get to the comments. I had to get a triple bypass just from looking at the picture, my kidneys failed just from thinking about the salt, and I developed diabetes just from considering the carbs!

    What happened to the Laura we knew a while back who was checking the carb content on salad dressing?!

    My mom makes that without the pounded chickeny bits and calls it harvest potatoes. She has to make at least two big casseroles of it and hide one, otherwise it never makes it to the table. We are kitchen vultures.

    Ooo, that looks great! I’ll have to make it soon. I just made a good one last week. You take pork sausage and brown it, then in the remaining fat, saute finely chopped sweet onion with a little bit of apple juice just to the point of caramelizing. Then you put the onions and sausage in a casserole dish with one or two chopped apples, and top with mashed sweet potatoes (butter + milk + a little nutmeg or cinnamon) then bake. Kind of a fall harvest shepherd pie. To die for!

    My Old Man was giddy last week when he found cream of mushroom soup at the Walmart for 48 cents…they wanted $1.08 for the store brand and this was the Campbells shit! I have had to hear about this smokin’ deal multiple times since then. I paid $11 for my shotgun shells which I felt was pretty good…and I don’t even think they were made in China. OK…maybe just the primers.

    Ok, I have my nitro pills on the table so I can have some of this tonight!
    I make a tater tot casserole that is about the same without the chicken and chicken soup, using browned (and drained) ground beef with cream of mushroom soup, mix it all up on top of the stove then put into a baking dish and put tater tots all over the top, bake according to the tots directions (425 for about 20 mins). Mmmm mmmm!

    Laura, my personal weakness topping is crushed original Lay’s potato chips….so I’d have to put them on top, but your dish sounds awesome !
